A wonderful lowfat muffin with a hint of orange flavor. Perfect for breakfast on the run!

Orange Yogurt Muffins

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
2 large eggs
1/4 cup SPLENDA® No Calorie Sweetener, Granulated
2 tablespoons canola oil
1 cup plain low-fat yogurt
2 teaspoons vanilla extract
1 teaspoon freshly grated orange peel
  1. Preheat oven to 350°F (175°C). Place paper baking cups in muffin pans, and coat with vegetable cooking spray.
  2. Combine flour, baking powder, soda and salt; set aside.
  3. Beat eggs and SPLENDA® Granulated Sweetener at high speed with an electric mixer for 5 minutes. Add oil, yogurt, vanilla, and orange peel; beat at medium speed until blended, about 1 minute. Add dry ingredients; beat at low speed until blended. Spoon mixture into prepared muffin pans; filling 3/4 full.
  4. Bake for 15 minutes or until cake tester inserted in center comes out clean. Remove from pans immediately and cool on wire rack.

Makes 8 muffins.
