Reduced calorie strawberry jam.

Strawberry Jam

2 quarts strawberries, fresh or frozen
4 tablespoons Equal® for Recipes, 40 Equal® packets or 1 2/3 cup Equal® Spoonful™
1 3/4 ounce packet no-sugar-needed pectin
  1. Mash strawberries, by hand or with a food processor to make 4 cups of pulp. Add pectin, allow to stand 5 to10 minutes. Cook in microwave safe pan 4 to 5 minutes, stirring every 2 minutes, or heat on top of the stove, stirring constantly until mixture comes to a boil. Boil 1 minute. Add Equal® or Equal® Spoonful™.
  2. Fill containers to 1/2-inch from the top. Seal and let stand at room temperature until firm (several hours). Refrigerate until chilled, or place jam in freezer.

Makes four (1/2 pint) jars.
