A banana and citrus flavored cake that is baked in layers, topped and filled with a cream cheese and pineapple mixture. A great special occasion cake.

Tropical Layer Cake

Cake:
2 ripe bananas, peeled, mashed
2 large eggs
1 1/2 cups light vanilla flavored nonfat yogurt
1/4 cup stick butter, softened
1/4 cup frozen pineapple-orange juice concentrate, thawed, divided use*
3 cups cake flour, unsifted
1 1/4 cups Equal® Spoonful**
1 tablespoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
 
Frosting:
12 ounces reduced fat cream cheese, softened
1/2 cup Equal® Spoonful***
1 (8-ounce) can crushed pineapple in juice, well drained
  1. For Cake: Beat bananas, eggs, yogurt, butter, vanilla and 3 tablespoons concentrate at medium speed of mixer until blended. Gradualy add combined dry ingredients until completely mixed. Divide batter evenly between 2 well sprayed 9-inch round cake pans.
  2. Bake in preheated 350°F oven 20 to 25 minutes or until wooden pick inserted near center comes out clean. Cool cake in pans 10 inutes. Remove and cool completely on wire racks.
  3. For Frosting: Beat cream cheese until fluffy. Add 1/2 cup Equal® and remaining 1 tablespoon concentrate, beating until smooth. Beat in crushed pineapple. Spread frosting evenly between layers and on top of cake.
  4. Refrigerate 1 to 2 hours before serving. Refrigerate any leftovers.

Makes 12 servings.

* Make the remainder of the concentrate into juice.

** May substitute 30 packets Equal sweetener

*** May substitute 12 packets Equal sweetener
