Marinated overnight in sherry and stuffed
with chopped apple, celery, sausage and bread croutons and cooked
in a smoker for 4 hours.
Smoked Duck
- 1 (5-pound) duck
1/2 cup cooking sherry
1/2 cup chopped apple
1 celery rib, chopped
1 jalapeño, seeded and chopped
1/4 pound mild or hot sausage, cooked and crumbled
1/4 teaspoon salt
1/8 teaspoon pepper
1 garlic clove, crushed
1 cup croutons
- Wash duck; wipe dry inside and out. Place
in a foil baking pan and pour sherry on top. Refrigerate and
marinate overnight, turning occasionally.
- Combine chopped apple, chopped celery
rib, chopped jalapeno, cooked sausage, salt, pepper, crushed
garlic clove, and croutons; mix well.
- Stuff into the duck and place in a smoker.
Cook for 4 hours, following the manufacturer's instructions.
Makes 4 servings.
