Calico Rice
and FrankFurters
- 1 (12-ounce) package frankfurters,
cut into 1/2-inch pieces
1/3 cup finely chopped onion
1 cup sliced celery
3 cups cooked rice
1/3 cup sweet pickle relish
2 tablespoons vegetable oil
1 tablespoon vinegar
1 tablespoon prepared mustard
1 teaspoon salt
1/4 teaspoon ground black pepper
2 hard-cooked eggs, chopped
- Cook frankfurters, onion
and celery in skillet over low heat until vegetables are tender
crisp. Add rice and relish.
- Blend oil, vinegar, mustard,
salt and pepper. Stir into rice mixture; heat thoroughly. Gently
fold in eggs.
