The buns are missing, but you'll find ground beef, cheese and tomato in this hearty casserole with a pastry to to keep the juices and flavors inside.

Cheeseburger Pie

1 pound lean ground beef
1 onion, chopped
1/4 teaspoon salt
1/8 teaspoon ground black pepper
3 large eggs
1 1/2 cups milk
3/4 cup biscuit baking mix
2 tomatoes, cored and sliced
1 cup shredded cheddar cheese
  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown ground beef and onion until crumbly, about 10 minutes; drain. Season with salt and pepper, then spoon into a 9-inch square baking dish.
  3. Combine eggs, milk and baking mix in a large bowl until smooth; pour over the meat. Bake in the oven for 25 minutes.
  4. Top with tomatoes and cheddar cheese; return to oven and bake until the center is set and the cheese melted, about 5 to 8 minutes.

Makes 6 servings.
