Crunchy chow mein noodles combined with Asian seasonings, cream of chicken soup, ground beef and vegetables makes some really tasty chow.

Chow Mein Casserole

1 pound ground beef
3/4 cup chopped celery
3/4 cup chopped onion
1 1/4 cups water, boiling
1/2 cup rice
1/2 teaspoon salt
1 (10.5-ounce) can cream of chicken soup
2/3 cup sliced mushrooms
1 tablespoon packed brown sugar
2 teaspoons soy sauce
1 teaspoon butter or margarine
1 1/2 cups chow mein noodles
  1. In a skillet brown ground beef. Add celery and onion. Cook until brown. Drain.
  2. In a greased 9-inch baking dish, pour boiling water on rice, stirring in salt. Stir in the ground beef mixture, cream of chicken soup, sliced mushrooms, brown sugar, soy sauce and butter.
  3. Cover and bake at 350°F (175°C) for 30 minutes; stirring occasionally.
  4. Bake, uncovered, for 30 additional minutes. Just before serving, stir in chow mein noodles.

Makes 8 servings.
