Increase the fiber in your diet by preparing this easy-to-make meatloaf. Great served hot or even better in a sandwich the next day.

Easy Meatloaf

1 (15-ounce) can mixed vegetables, drained
2 pounds lean ground beef
1/4 cup wheat germ
1/4 cup bran
1/4 cup tomato ketchup
  1. Preheat oven to 350°F (175°C). Grease a 9 x 5 x 3-inch loaf pan; set aside.
  2. Pour vegetables into a large mixing bowl; mash mixed vegetables as fine as possible. Add ground beef, wheat germ and bran and combine thoroughly. Add more bran or wheat germ if needed to make a firm mixture.
  3. Form into loaf and place in prepared loaf pan. Drizzle ketchup on top.
  4. Bake for 35 to 45 minutes or until firm.

Makes 6 servings.
