Easy Pleasing Meat Loaf
Seasoned stuffing mix makes short work of this flavorful meat loaf—eggs and barbecue sauce keep it moist while it bakes.
2 pounds lean ground beef or turkey
1 cup water
1 (6-ounce) package stuffing mix for beef
2 large eggs, beaten
1/2 cup barbecue sauce - divided use
- Preheat oven to 375°F (190°C).
- In a large bowl mix meat, water, stuffing, eggs and half of barbecue sauce. Shape into an oval loaf in a 13x9x2-inch baking dish; top with remaining barbecue sauce.
- Bake until center is no longer pink, about 1 hour.
Makes 6 to 8 servings.
