This meat loaf has a rich tomato flavor and an ever-so-slight sweetness to it. Great for dinner or sandwiches.

Mae's Meat Loaf

1 1/2 pounds lean ground beef
1 (16-ounce) can tomato sauce, divided use
1 cup dry bread crumbs
1/4 cup chopped onion
1 large egg
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup water
2 tablespoons firmly packed brown sugar
1 tablespoon cider vinegar
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together ground beef, half the tomato sauce, bread crumbs, onion, egg, salt and pepper. Shape into a loaf and place in a 9 x 5 x 3-inch pan.
  3. Combine remaining tomato sauce, water, brown sugar and cider vinegar; pour over meatloaf.
  4. Bake for 1 hour and serve warm.

Makes 8 servings.
