This tasty meatloaf is the perfect recipe when you want to add a dash of comfort with a touch of class to a weekday meal. The secret ingredient in this recipe is the sofrito (tomato, garlic, onion) paste.
3 MAGGI Garlic Flavor Seasoning Cubes, crushed
1/4 cup hot water
1 1/2 pounds lean ground beef
2 (3.98-ounce) packets MAGGI Sofrito Seasoning Paste (tomato, garlic, onion) - divided use
1 small onion, finely chopped
1/2 medium green bell pepper, finely chopped
1 cup plain dry bread crumbs
2 tablespoons finely chopped fresh parsley or cilantro - divided use
1/2 teaspoon ground black pepper
2 large eggs, slightly beaten
- Preheat oven to 375°F (190°C). Dissolve seasoning cubes in hot water.
- Combine beef, 1 packet sofrito, onion, bell pepper, bread crumbs, seasoning cube mixture, 1 tablespoon parsley, black pepper and eggs in large bowl; mix well.
- Shape mixture into a loaf and place in ungreased 13x9x2-inch baking pan. Spread remaining packet sofrito on top of meatloaf.
- Bake for 60 to 70 minutes or until no longer pink in center. Let stand for 10 to 15 minutes before serving. Sprinkle with remaining 1 tablespoon parsley.
