Mini Pork Meat Loaves

Mini Pork Meat LoavesThese individual meat loaves make a great weeknight meal. Serve with baked potatoes and green beans.

Recipe Ingredients:

1 pound ground pork
1 (14-ounce) jar pasta sauce
1 1/2 cups shredded Italian cheese blend
1 1/2 cups soft fresh bread crumbs
1 large egg
1 tablespoon salt-free Italian herb blend seasoning
1/2 teaspoon salt
2 Roma tomatoes, thinly sliced
1/4 cup fresh basil leaves (optional)

Cooking Directions:

  1. In large mixing bowl combine ground pork, 3/4 cup of pasta sauce, 1 cup of cheese, bread crumbs, egg, seasoning and salt.
  2. Shape mixture into 4 oval-shaped loaves (about 6-inch in length) and place on a foil lined baking sheet sprayed with nonstick
  3. cooking spray.
  4. Top each loaf with some of the remaining pasta sauce, remainder of the cheese and fresh tomato slices.
  5. Bake in 425°F (220°C) oven for 15 minutes or until cooked through to a final internal temperature of 160°F (71.1°C). Garnish with basil leaves if desired and serve with any remaining sauce.

Makes 12 servings.
