Crisp on the outside, tender
and flavorful on the inside, salmon 'burger' tucked inside a
soft roll with mayo, a squeeze of lemon and a lettuce leaf.

Salmon Burgers
- 2 (14.75-ounce) cans salmon,
drained and flaked
1 1/2 cups bread crumbs - divided use
3 large eggs, beaten
2 tablespoons crushed dried parsley
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons vegetable oil
4 soft rolls, split and toasted
4 tablespoons mayonnaise
1 lemon, juiced
4 lettuce leaves
- Combine salmon, 1/4 cup
bread crumbs, beaten eggs, parsley, salt and pepper in a bowl.
Mix well and form into 4 large patties. Dredge until evenly coated
in remaining bread crumbs.
- Heat oil in a large, nonstick
skillet over medium-high heat. Add patties and cook 5 minutes
per side, or until golden brown and crisp. Adjust heat as needed
to brown evenly.
- Spread mayonnaise on bottom
halves of rolls. Top with salmon patties. Sprinkle with lemon
juice and top with lettuce leaves and cover with top halves.
Serve immediately.
