Savory Beef Burgers

1 pound extra lean ground beef
2 tablespoons minced onion
1 tablespoon Dijon-style mustard
3/4 teaspoon dried Italian seasoning
1/4 teaspoon each ground cumin, cracked black pepper and salt
8 Bibb lettuce leaves
8 medium tomato slices, cut 1/4 inch thick
8 thin red onion rings
  1. Combine ground beef, minced onion, mustard, Italian seasoning, cumin, pepper and salt, mixing lightly but thoroughly.
  2. Divide beef mixture into 4 equal portions; shape into patties 4 inches in diameter. Place patties on rack in broiler pan so surface of meat is 3 to 4 inches from heat source. Broil to desired doneness, 8 to 10 minutes, turning once.
  3. Place 2 or 3 lettuce leaves on each individual plates; top with 2 tomato slices, 2 onion rings and a burger. Garnish as desired.

Makes 4 servings.
