A breeze to make, this Southwestern-inspired casserole is a hearty dish.
South-Of-The-Border Casserole
- 1 pound lean ground beef
1 onion, chopped
1 1/2 cups cooked rice
1 (15-ounce) can ranch-style beans
2 cups (8 ounces) shredded cheddar cheese
1 (10.5-ounce) package corn chips
1 (14.5-ounce) can diced tomatoes and green chiles, drained
1 (10.75-ounce) can condensed cream of mushroom soup
- Preheat oven to 350°F (175°C). Grease a 2-quart baking dish and set aside.
- In a large skillet, brown ground beef and onion; drain. Layer in prepared baking dish and top with cooked rice, beans, cheddar cheese, corn chips, diced tomatoes and cream of mushroom soup.
- Bake for 30 minutes, or until hot and bubbly. Serve warm.
