South-Of-The-Border Casserole

South-Of-The-Border CasseroleThis family-pleasing, Southwestern-inspired casserole is a breeze to make.

Recipe Ingredients:

1 pound lean ground beef
1 onion, chopped
1 1/2 cups cooked rice
1 (15-ounce) can ranch-style beans
2 cups (8 ounces) shredded cheddar cheese
1 (10.5-ounce) package corn chips (not tortilla chips)
1 (14.5-ounce) can diced tomatoes
1 (4-ounce) can ORTEGA Diced Green Chiles
1 (10.75-ounce) can condensed cream of mushroom soup
Sour cream for accompaniment (optional)

Cooking Directions:

  1. Preheat oven to 350°F (175°C). Grease a 2-quart baking dish and set aside.
  2. In a large skillet, brown ground beef and onion; drain. Layer in prepared baking dish and top with cooked rice, beans, cheddar cheese, corn chips, diced tomatoes, chiles and cream of mushroom soup.
  3. Bake for 30 minutes, or until hot and bubbly. Serve warm topped with a dollop of sour cream, if desired.
