A breeze to make, this Southwestern-inspired casserole is a hearty dish.

South-Of-The-Border Casserole

1 pound lean ground beef
1 onion, chopped
1 1/2 cups cooked rice
1 (15-ounce) can ranch-style beans
2 cups (8 ounces) shredded cheddar cheese
1 (10.5-ounce) package corn chips
1 (14.5-ounce) can diced tomatoes and green chiles, drained
1 (10.75-ounce) can condensed cream of mushroom soup
  1. Preheat oven to 350°F (175°C). Grease a 2-quart baking dish and set aside.
  2. In a large skillet, brown ground beef and onion; drain. Layer in prepared baking dish and top with cooked rice, beans, cheddar cheese, corn chips, diced tomatoes and cream of mushroom soup.
  3. Bake for 30 minutes, or until hot and bubbly. Serve warm.
