This tasty casserole is a great recipe for using up leftovers like spaghetti pasta, ham, chicken or turkey.

Spaghetti Pie

14 ounces spaghetti pasta, cooked according to package directions (8 cups cooked)
6 large eggs, lightly beaten
4 cups (1 pound) shredded mozzarella
2 cups cooked crumbled Italian sausage or ham cut into 1/4-inch dice
1 cup freshly grated Parmesan cheese
1/4 cup heavy cream
1 teaspoon dried parsley
1 teaspoon salt
Freshly ground pepper to taste
  1. Preheat oven to 375°F (190°C). Grease a 13 x 9 x 2-inch baking pan. Set aside.
  2. Cook spaghetti according to package directions; drain well.
  3. Meanwhile, in a large bowl, combine eggs, mozzarella, sausage or ham, Parmesan, cream, parsley, salt, and pepper, mixing well. Add the cooked spaghetti and toss to combine. Turn mixture into prepared baking pan.
  4. Cover and bake for about 40 minutes. Remove cover, and bake for additional 20 minutes or until lightly browned and crisp on top. Let set for 10 minutes before serving.

Serves 8 to 10.
