A festive layered red and green gelatin mold with pineapple tidbits.

Christmas Ribbon Mold

2 cups boiling water - divided use
1 (3.25-ounce) package red gelatin, any flavor
1 1/2 cups cold water, divided use
1 (3.25-ounce) package lime gelatin
1 (8-ounce) can pineapple tidbits, drained thoroughly
  1. Stir 1 cup of the boiling water into dry red gelatin in medium bowl at least 2 minutes until completely dissolved. Stir in 3/4 cup of the cold water. Pour into 5-cup ring mold. Refrigerate 2 hours or until set but not firm (gelatin should stick to finger when touched and should mound).
  2. Meanwhile, stir remaining 1 cup boiling water into dry lime gelatin in medium bowl at least 2 minutes until completely dissolved. Stir in remaining 3/4 cup cold water. Refrigerate 30 minutes or until it has the consistency of egg white; gently stir in drained pineapple. Spoon over red gelatin.
  3. Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator.

Makes 8 to 10 servings.
