Holiday Chicken Salad

No recipe image available.Dried cranberries add holiday flavor and color to this tasty chicken salad. Try it with leftover holiday turkey, too.

Recipe Ingredients:

3/4 cup mayonnaise
1 teaspoon paprika
1 teaspoon seasoned salt
Freshly ground black pepper to taste
1 1/2 cups craisins (sweetened dried cranberries)
1 cup chopped celery
2 green onions, sliced
1/2 cup minced green bell pepper
1 cup chopped pecans or walnuts (preferably toasted)
4 cups cooked and cubed chicken

Cooking Directions:

  1. In a medium bowl, mix together mayonnaise with paprika, seasoned salt and pepper.
  2. Stir in craisins, celery, bell pepper, onion, and nuts. Fold in chopped chicken, and mix well. Chill 1 hour.
  3. Serve on a bed of lettuce or use as a sandwich filling.

Makes 12 servings.
