Holiday Feta Cheese Ball

2 (8-ounce each) packages cream cheese, softened
2 (8-ounce) packages feta cheese, coarsely chopped
1/4 cup sliced green onions
1/4 cup finely chopped red bell pepper
1 cup chopped nuts, toasted*
I bunch fresh parsley, chopped
  1. In a medium bowl, beat the cream cheese and feta cheese with an electric mixer on medium speed until well blended.
  2. Add remaining ingredients and mix well. Cover. Refrigerate several hours or until well chilled.
  3. Shape into ball and roll in chopped fresh parsley; cover and refrigerate until serving time.
  4. Serve with assorted crackers.

Makes 24 servings.

*To toast nuts, place in a shallow baking pan. Bake at 350°F (175°C) for 10 to 15 minutes or until nuts are lightly browned, stirring occasionally. Cool.
