A creamy lemon gelatin salad mold with chopped apple, celery and walnuts.

Waldorf Gelatin Salad

2 cups boiling water
2 (3.25-ounce each) packages lemon gelatin
1 cup cold water
1 tablespoon lemon juice
1/2 cup mayonnaise
1 medium red apple, cored and chopped
1/2 cup sliced celery
1/2 cup chopped walnuts (optional)
  1. In a large bowl, stir boiling water and gelatin until completely dissolved. Stir in cold water and lemon juice. Refrigerate until thickened, but not firm, about 1 to 1 1/2 hours.
  2. Gradually whisk in mayonnaise with wire whisk until well blended. Stir in apple, celery and walnuts, if desired.
  3. Pour into a greased 5-cup mold. Refrigerate until firm, about 4 hours.
  4. Unmold onto serving plate.

Makes 10 servings.
