Jamaican Coconut Pudding

No recipe image available.A baked coconut pudding that is very easy to prepare.

Recipe Ingredients:

1/2 shredded or flaked coconut
1/4 cup dry bread crumbs
1 cup milk
2 large eggs
2 tablespoons butter
2 tablespoons granulated sugar
1/8 teaspoon salt

Cooking Directions:

  1. Preheat oven to 350°F (175°C).
  2. Put all ingredients in a blender and beat until smooth. Pour into a buttered pie dish and bake for 1 hour.

Makes 6 servings.
