Coconut Pudding
- 1/2 shredded or flaked
coconut
- 1/4 cup dry bread crumbs
- 1 cup milk
- 2 large eggs
- 2 tablespoons butter
- 2 tablespoons granulated
sugar
- 1/8 teaspoon salt
- Preheat oven to 350°F
(175°C).
- Put all ingredients in
a blender and beat until smooth. Pour into a buttered pie dish
and bake for 1 hour.
Serves 6.
