A traditional recipe for your Passover
dinner. A great way to use up leftover matzo!
Matzo
Brei
- 2 large eggs
1/2 cup evaporated milk
1/4 cup finely chopped onion
Salt and ground pepper, to taste
4 matzos (6-inch square each)
1 to 2 tablespoons margarine or butter - divided use
Sour cream or applesauce (optional)
- Beat eggs and evaporated
milk in medium bowl. Add onions; mix well. Season with salt and
black pepper. Crumble matzos into large pieces into colander.
Run water through matzos until slightly absorbed. Press down
on matzos to get rid of excess water. Add matzos to egg mixture;
mix well.
- Melt 1 tablespoon margarine
in large, non-stick skillet over medium heat. Pour 1/4 cup matzo
mixture onto hot skillet. Brown on one side, about 1 to 2 minutes.
Turn and continue browning on other side. Repeat with remaining
matzo mixture, using additional margarine, if necessary. Serve
immediately. Top with sour cream or applesauce, if desired.
Makes 8 servings.
Cook's Note: For Sweet
Matzo Brei, substitute 1 tablespoon honey and 1/2 teaspoon ground
cinnamon for chopped onion and ground black pepper. Serve with
Delicious Pumpkin Apple Butter (link to recipe) or maple syrup,
if desired.
