Quick and easy, Italian-style lamb and pasta skillet dinner.

Lamb and Pasta Skillet Dinner

1 pound lamb, sliced
1 tablespoon vegetable oil
1/2 cup chopped onion
1 clove garlic, crushed
3 cups tomato juice
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon crushed dried basil
1/2 teaspoon crushed dried oregano
8 ounces mostaccioli pasta
1 (10-ounce) package frozen mixed vegetables, thawed
  1. Heat oil in a large saucepan over medium heat until a drop of water sizzles in the oil. Add lamb and cook, stirring frequently until no longer pink. Add onion and garlic; sauté for 5 minutes, but do not brown.
  2. Add tomato juice, salt, pepper, basil and oregano; simmer covered for 10 minutes. Add mostaccioli and continue to cook for approximately 10 minutes or until pasta is almost cooked.
    Stir in mixed vegetables and simmer for 15 minutes, or until the vegetables are tender-crisp.

Makes 6 servings.
