Lamb chops served with a drizzle of cool and refreshing lemony yogurt mint sauce.

Lamb Chops with Yogurt Mint Sauce

4 (6-ounce) lamb chops
2 tablespoons olive oil
1/2 teaspoon salt - divided use
1/4 teaspoon ground black pepper - divided use
1 (8-ounce) container plain yogurt
1 lemon, juiced
1 tablespoon chopped fresh mint
1/4 teaspoon paprika
  1. Preheat broiler.
  2. Brush lamb chops on both sides with olive oil and season with half the salt and half the pepper; place on a broiler pan. Broil for about 4 minutes per side for medium-rare.
  3. Meanwhile mix together remaining salt and pepper, yogurt, lemon juice, mint and paprika; blend well.
  4. Serve lamb chops drizzled with yogurt sauce.

Makes 6 servings.

Cooking Tip: Also good grilled.
