Try lamb as a more complex-flavored alternative to ground beef in this quick one-dish meal.

Lamb with Tomato Rice

1 pound ground lamb
1/2 cup chopped onion
1/4 cup chopped green bell pepper
1 1/2 cups instant rice
1 (14.5-ounce) can stewed tomatoes
1 cup hot water
1 teaspoon prepared mustard
1 teaspoon garlic salt
1/4 teaspoon ground black pepper
  1. In a large saucepan, brown lamb, onion and bell pepper, until meat is done and vegetables are tender, about 8 minutes. Add rice and stir to coat. Blend in tomatoes, water, mustard, garlic salt and pepper. Bring to a boil, cover and let sit for 5 minutes off the heat until rice is done. Serve warm.

Makes 6 servings.
