Mandarin Lamb with Oriental Noodles

1 tablespoon vegetable oil
2 garlic cloves, crushed
1 pound lamb, cut into 1-inch strips
3 ounces ramen noodles
1 cup water
1 zucchini, sliced
1 carrot, sliced
1/2 red bell pepper, sliced
2 celery ribs, sliced
1/4 cup sweet and sour sauce
1/2 cup Mandarin orange sections
1/4 cup almonds, chopped
  1. Heat oil and crushed garlic cloves on medium-high heat in a large skillet or wok. Add lamb and stir fry about 3 minutes, or until no longer pink; remove from the skillet and set aside.
  2. Break up ramen noodles, and add the noodles, water, the included flavor packet, sliced zucchini, sliced carrot, red bell pepper, and thinly sliced celery ribs to the skillet or wok. Bring to a boil, reduce the heat, cover, and simmer for 3 to 5 minutes, or until the vegetables are tender-crisp. Stir in the cooked lamb, sweet and sour sauce, and mandarin orange sections. Heat through. Top with chopped almonds.

Makes 4 servings.
