Succulent, tender lamb chops cooked to perfection are just around the corner! A zesty mixture of red wine vinegar, orange juice and molasses melds perfectly with a savory mixture of spices, lime and fresh mint. The chops can also be grilled.

Mint-Chili Lamb Chops

3 lamb rib chops
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/4 cup red wine vinegar
1/4 cup orange juice
1/4 cup molasses
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 cup chopped fresh mint
1/4 cup lime juice
1/4 teaspoon salt
1/8 teaspoon ground black pepper
  1. Sprinkle lamb chops with first additions of salt and pepper; refrigerate.
  2. Combine vinegar and orange juice in a medium saucepan. Bring mixture to a boil; reduce heat to a simmer. Stir in molasses, chili powder and cumin; simmer for 10 minutes. Remove from heat; stir in mint and lime juice. Season with salt and pepper.
  3. Broil chops for about 8 minutes on each side. During final minute of broiling, brush with mint/chili glaze. Brush again before serving.

Makes 3 servings.
