A hearty dish of lamb baked in a rich gravy and topped with a golden layer of baked mashed potatoes.

Shepherd's Pie

1 onion, chopped
4 ounces mushrooms, sliced
1/4 cup butter
1 pound ground lamb
1 cup water
1 packet brown gravy mix
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 cups mashed potatoes
1 large egg
  1. Preheat oven to 425°F.
  2. In a large skillet sauté onion and mushrooms in butter until lightly browned; remove from pan and set aside. Brown lamb in same pan. Add water, gravy mix, Worcestershire sauce, salt, pepper, and reserved onions and mushrooms. Mix well and transfer to a 13x9x2-inch baking dish.
  3. In a medium bowl combine mashed potatoes and egg; beat until smooth and creamy. Spread over lamb mixture then bake for 20 minutes, or until top is lightly browned. Serve warm.

Makes 4 servings.
