Spanakopita - Greek Spinach & Cheese Pie

Recipe Ingredients:

3 large eggs
6 tablespoons all-purpose flour
1 (10-ounce) package frozen, chopped spinach, thawed and squeezed dry
2 cups cottage cheese
2 cups Wisconsin cheddar cheese, shredded
1/2 teaspoon salt
1 dash cream of tartar
1 tablespoon minced onion

Cooking Directions:

  1. Preheat oven to 350ºF (175ºC).
  2. Beat eggs with flour until smooth. Mix in remaining ingredients.
  3. Pour into well-buttered two-quart casserole.
  4. Bake uncovered for one hour.

Makes 6 servings.
