No frills, just a great
basic blueberry pie...oft times the simple things in life are
best. Serve topped with a dollop of
sweetened whipped cream.
Basic
Blueberry Pie
- 4 cups blueberries, fresh
or frozen
1 cup granulated sugar
1/4 cup lemon juice
1/3 cup cornstarch
1/4 cup water
1 (9-inch) unbaked pie crust
- Preheat oven to 400°F
(205°C).
- In a heavy saucepan over
medium heat, mix together blueberries, sugar and lemon juice.
Bring to a boil, stirring frequently.
- Mix cornstarch with water
to make a paste. Pour into berry mixture, stirring constantly
until thick. Remove from heat and let cool.
- Pour berry mixture into
unbaked pie shell. Bake for about 35 minutes or until the crust
is golden.
Makes 8 servings.
