French Coconut Pie

1 1/2 cups granulated sugar
3 large eggs, beaten
1 1/2 cups sweetened flaked coconut
1/2 cup butter or margarine, melted
1 tablespoon white distilled vinegar
1 teaspoon vanilla extract
1 (9-inch) unbaked pie shell
  1. Preheat oven to 350*F.
  2. Combine sugar, beaten eggs, coconut, melted butter, vinegar, and vanilla; mix well.
  3. Pour into unbaked pie shell and bake for 50 to 60 minutes, or until a knife inserted in center comes out clean.
  4. Cool before serving.

Makes 8 servings.
