A creamy, smooth as silk chocolate pie with a graham cracker crust, garnished with sweetened whipped cream flavored with mint.

French Silk Chocolate Pie

1 (9-inch) graham cracker pie crust
1/2 cup butter or margarine, softened
3/4 cup granulated sugar
1 square baking chocolate, melted, cooled
1 teaspoon vanilla extract
2 large fresh eggs*
1 cup heavy cream, whipped
1/4 teaspoon mint extract
  1. Prepare a graham cracker pie crust.
  2. In a bowl cream butter with an electric mixer. Slowly add sugar. Blend in baking chocolate and vanilla. Add eggs, one at a time, beating at medium speed for 3 minutes after each egg addition.
  3. Pour into the prepared graham cracker pie crust. Chill.
  4. Before serving, garnish with whipped cream flavored with mint extract

Makes 8 servings.

*Note: Please exercise caution when using raw eggs that are uncooked in prepared food (see Food Safety). We suggest using a pasteurized egg product for this recipe.
