Poached apple slices sit atop a flourless hazelnut crust. The crust can be prepared ahead of time, if desired, but the fruit should be put on top just before serving.

Golden Glazed Apple Tart

1 cup crushed shredded wheat cereal
1/2 cup finely chopped toasted hazelnuts
3 tablespoons melted butter or margarine
1 large egg white
4 Golden Delicious apples, cored and sliced
2 cups apple juice
1/3 cup apple jelly
1/4 teaspoon grated lime zest
  1. Heat oven to 375°F (190°C).
  2. In medium-size bowl, combine cereal, hazelnuts, butter, and egg white; mix until well combined. Pat mixture firmly into bottom and 1/2-inch up sides of lightly greased 9-inch tart pan. Bake crust 10 minutes or until lightly browned.
  3. Heat broiler. In medium saucepot, heat apple juice to simmering. Add apple slices and poach 5 minutes. With slotted spoon, remove apples from juice and arrange on baked crust.
  4. In small saucepan, melt jelly; add lime zest. Brush jelly mixture over apple slices; Broil tart 1 to 2 minutes to caramelize jelly.

Makes 8 servings.
