A creamy, maple syrup custard
pie crowned with a golden meringue.
Maple
Syrup Pie
- 2 tablespoons all-purpose
flour
1 tablespoon butter
2 large egg yolks
1 cup pure maple syrup
1/2 cup water
2 large egg whites
2 tablespoons granulated sugar
1 (9-inch) baked pie shell
- In the top of a double
boiler with an electric mixer on medium speed, cream together
flour and butter. Add egg yolks and beat well before adding maple
syrup and water.
- Place the top of the double
boiler over the bottom half and cook the mixture until thick.
Pour into baked pie shell.
- Beat egg whites and sugar
to stiff peaks and spread the meringue evenly on top. Broil for
3 to 4 minutes, or until glazed.
Makes 8 servings.
