Maple Syrup Pie

2 tablespoons all-purpose flour
1 tablespoon butter
2 large egg yolks
1 cup pure maple syrup
1/2 cup water
2 large egg whites
2 tablespoons granulated sugar
1 (9-inch) baked pie shell
  1. In the top of a double boiler with an electric mixer on medium speed, cream together flour and butter. Add egg yolks and beat well before adding maple syrup and water. Place the top of the double boiler over the bottom half and cook the mixture until thick. Pour into baked pie shell.
  2. Beat egg whites and sugar to stiff peaks and spread the meringue evenly on top. Broil for 3 to 4 minutes, or until glazed.

Makes 8 servings.
