Pumpkin Recipes

Two holiday favorites are combined into one easy pie. Pumpkin adds a creaminess to the condensed sweetness of the mincemeat fruits. Bring this one to your next holiday gathering.

Mincemeat-Pumpkin Pie

1 cup canned pumpkin
1/2 cup firmly packed brown sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon salt
3 large eggs
1/2 cup whipping cream
1 cup prepared mincemeat
1 (9-inch) unbaked pie crust
  1. Preheat oven to 425°F (220°C).
  2. Combine pumpkin, brown sugar, cinnamon, nutmeg and salt in a large mixing bowl; mix well. Add eggs and cream; beat until smooth. Stir in mincemeat and pour into unbaked pie shell.
  3. Bake for 35 minutes or until center is set. Cool slightly on a wire rack before serving.

Makes 8 servings.
