Two holiday favorites are combined into one easy pie. Pumpkin adds a creaminess to the condensed sweetness of the mincemeat fruits. Bring this one to your next holiday gathering.
1 cup canned pumpkin
1/2 cup firmly packed brown sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon salt
3 large eggs
1/2 cup whipping cream
1 cup prepared mincemeat
1 (9-inch) unbaked pie crust*
Sweetened whipped cream for accompaniment (optional)
- Preheat oven to 425°F (220°C).
- Combine pumpkin, brown sugar, cinnamon, nutmeg and salt in a large mixing bowl; mix well. Add eggs and cream; beat until smooth. Stir in mincemeat and pour into unbaked pie crust.
- Bake for 35 minutes or until center is set. Cool on a wire rack before serving.
- Serve topped with sweetened whipped cream, if desired.
Makes 8 servings.
*Use store bought, ready-to-use pie pastry, or your favorite recipe for homemade pie pastry.
