This simple, no-bake peach pie is an easy way to transform fresh summer peaches into a cool, sweet treat, ideal after a barbecue or Southern-style meal.

Peach Glaze Pie

1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
1 cup crushed peeled peach
1 (3-ounce) package cream cheese, softened
1 (9-inch) baked pie crust
5 cups sliced peeled peaches
2 tablespoons lemon juice
  1. Stir together sugar and cornstarch in a heavy medium saucepan. Gradually stir in water and crushed peaches. Cook over medium heat, stirring constantly as the mixture thickens; let it come to a boil and continue cooking and stirring for 1 minute. Remove from heat and set aside to cool.
  2. In a mixing bowl, beat cream cheese until smooth. Spread in bottom of baked pie crust.
    In a separate bowl , toss peaches with lemon juice and spread evenly over cream cheese mixture; pour cooked peach mixture on top.
  3. Refrigerate for 3 hours, or until set.

Makes 8 servings.
