A baked pastry crust is
spread with cream cheese, topped with fresh strawberries and
drizzled with a homemade strawberry glaze.
Strawberry
Cream Pie
- 1 (9-inch) baked pastry
pie crust
- 2 (3-ounce) packages cream
cheese, softened
2 pints strawberries, cleaned and halved
3 tablespoons cornstarch
1 cup granulated sugar
1 teaspoon lemon juice
1 cup heavy cream
- Spread the baked pastry
crust with the cream cheese.
- Slice 1 pint of strawberries
and arrange on top of the cream cheese.
- In a saucepan combine
remaining 1 pint of strawberries, which have been crushed, with
cornstarch, sugar, and lemon juice. Cook over medium heat until
mixture thickens. Cool and pour over the fresh berries. Chill
until set.
- Garnish with whipped cream.
