These delicious pies are too good to refuse.

Sweet Potato Pies

2 large or 3 medium sweet potatoes
1/2 cup (1 stick) butter or margarine, softened
1 cup granulated sugar
2 tablespoons firmly packed brown sugar
2/3 cup (a 5-ounce can) NESTLÉ® CARNATION® Evaporated Milk
2 large eggs, beaten
1 teaspoon vanilla extract
1 teaspoon lemon juice
1/8 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 (9-inch) unbaked pie shells (2-cup volume)
  1. Cook sweet potatoes in boiling water for 45 to 50 minutes or until tender. Drain, cool slightly and peel.
  2. Preheat oven to 425°F.
  3. Mash warm sweet potatoes and butter in large bowl. Stir in granulated sugar, brown sugar, evaporated milk and eggs. Stir in lemon juice, vanilla extract, salt, cinnamon and nutmeg. Pour into prepared shells.
  4. Bake for 15 minutes. Reduce heat to 350°F.; bake for 30 to40 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.
