Very Blueberry Pie

1 (10-inch) baked pie shell
4 tablespoons butter
5 tablespoons all-purpose flour
3/4 cup water
1 cup sugar
4 cups fresh or frozen blueberries
Lightly sweetened whipped cream or vanilla ice cream for accompaniment
  1. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute, stirring constantly. Add the water and sugar and 1 cup of the blueberries. Bring mixture to a boil and cook over medium heat until mixture thickens, stirring frequently. Remove mixture from heat and cool.
  2. Stir in remaining 3 cups blueberries into cooled mixture and pour into baked pie shell. Refrigerate until ready to serve. Serve accompanied with a dollop of lightly sweetened whipped cream or a scoop of vanilla ice cream, if desired.

Makes one 10-inch pie.
