Caribbean-style pizza with jerk chicken, pineapple, unsweetened coconut flakes, sweet pepper and Wisconsin queso blanco con fruitas (white cheese with fruit).

Caribbean con Frutas Pizza

1 (12-inch) pre-baked pizza crust
3 ounces pizza sauce
1/2 lime, juiced
5 ounces jerk marinated chicken, diced, cooked*
2 ounces pineapple, diced
1/4 ounce unsweetened coconut flakes
1/4 ounce scallion, chopped fine
2 ounces sweet pepper, julienned
5 ounces Wisconsin Queso Blanco con Fruitas, shredded - divided use
3 ounces Wisconsin Asadero, shredded - divided use
Red pepper flakes to taste
  1. Combine the juice of half a lime with the pizza sauce. Spread pizza sauce on crust.
  2. Combine Queso Blanco con Fruitas and Asadero in a bowl and mix well. Spread three quarters of the cheese mixture over the sauce. Top with remaining ingredients as listed and finish with remaining cheese blend.
  3. Bake at 450°F (230°C) for 25 minutes. Serve hot.

Makes 4 servings.

*Or substitute with cooked chicken breast, if desired.
