Fresh Plum, Walnut and Gorgonzola Pizza.

Simple, yet sophisticated, this 'flatbread pizza', made with whole-wheat tortillas, is topped with melted butter, slices of fresh plums, walnuts and gorgonzola cheese.

Fresh Plum, Walnut and Wisconsin Gorgonzola Pizza

12 (8-inch) whole-wheat tortillas
4 tablespoons (1/2 stick) butter, melted
24 fresh, large plums, pitted* and thinly sliced
3/4 cup chopped walnuts
3 cups (18 ounces) crumbled Gorgonzola cheese
  1. Preheat the broiler.
  2. Brush the tortillas with melted butter, using about 1 teaspoon butter for each. Brown on both sides on a grill or griddle.
  3. Arrange 2 plums on top of each tortilla to cover the surface. Sprinkle with the walnuts. Sprinkle about 1/4 cup of cheese on each pizza.
  4. Broil 30 seconds to 1 minute until the cheese is melted. Cut into quarters and serve.

Makes 12 servings.

*Fresh pears may be substituted for the plums when plums are out of season, using about 1/2 pear per pizza.
