Gorgonzola and Caramelized Onion Pizza
A simple, yet elegant pizza topped with sweet caramelized onions, toasted pecans and earthy, piquant flavored creamy gorgonzola cheese.
1 1/2 cups julienned onion
2 tablespoons butter
1/3 cup mascarpone cheese
1 (12-inch) pre-baked pizza crust
3/4 cup (about 4 ounces) cubed Italian-style Gorgonzola cheese
1/4 cup chopped pecans
- Preheat the oven to 450°F (230°C).
- In a sauté pan over medium heat, brown the onions in butter until caramelized; cool.
- Place the pizza crust on a pizza pan or a large baking sheet. Spread the mascarpone evenly over the pizza crust. Place the cooled caramelized onions on the cheese. Sprinkle the Gorgonzola and pecans over the top.
- Bake for 6 to 9 minutes or until the crust is lightly browned and the cheese is hot.
