Pork ribs soak in an adobo marinade for at least two hours and are then oven roasted until tender.

Adobo Marinated Ribs

9 pounds pork ribs
1 1/2 cups adobo marinade*
1/2 cup tomato ketchup
1/2 cup vinegar
2 cloves garlic
3 tablespoons brown sugar, packed
3 tablespoons dried marjoram
3 tablespoons dried thyme
  1. Mix the adobo marinade, ketchup, vinegar, garlic, brown sugar, thyme and marjoram in a bowl. Reserve half the sauce, and marinate the ribs in the remaining sauce for over two hours, turning frequently.
  2. Heat the oven to 350°F (175°C) and place the ribs in an oven tray and pour some of the sauce on them.
  3. Bake for 1 1/2 hours while basting the ribs with the reserved sauce.

Makes 4 servings.
