The flavors of cranberry and orange make this roast a perfect choice for a festive holiday meal, but don't let the suggestion keep you from choosing to serve it any day of the year! Serve with baked potatoes, green beans and warm rolls.

Cranberry-Orange Pork Roast

2 pound boneless pork loin roast
1 (16-ounce) can whole berry cranberry sauce
2 tablespoons brown sugar
2 teaspoons grated orange peel

  1. In a small bowl, stir together cranberry sauce, brown sugar and orange peel.
  2. Place roast in a shallow baking dish. Spread with 1/4 cup cranberry mixture.
  3. Roast, uncovered, at 350 degrees F., for 45 to 60 minutes or until internal temperature registers 155 degrees F. Baste every 30 minutes with cranberry mixture. Let stand 10 minutes before slicing to serve.
  4. Heat remaining cranberry mixture and serve with roast.

Serves 8.
