Pungent and piquant with a double mustard and pepper coating, this grilled roast is sophisticated simplicity. Grill potato wedges to serve alongside, and add slice tomatoes in vinaigrette. Serve leftover roast sandwiches on rye bread with Swiss cheese and applesauce on the side.

Grilled Mustard Seed-Crusted Pork Roast

1 (3-pound) boneless pork roast
4 tablespoons Dijon-style mustard
1 tablespoon coarsely ground black pepper
4 tablespoons mustard seed
  1. Spread mustard over pork roast and sprinkle with pepper. Place mustard seed in a shallow pan; roll roast in seed to coat evenly.
  2. Grill over indirect heat in a covered grill until meat thermometer reads 155 degrees F., about 45 minutes to 1 hour.
  3. Let rest 5 to 10 minutes before slicing.

Serves 6 with leftovers.
