Honey-Apricot Pork Chops.

Need something when it is just the two of you? Make this dish and have plenty of time to spend together. Serve with wild rice, buttered green beans and crusty bread.

Honey-Apricot Pork Chops

2 bone-in pork chops, 3/4-inch thick
Vegetable oil
1/2 onion, chopped
1 mild green chile, chopped
1 clove garlic, minced
1/2 cup apricot nectar
1/2 cup dried apricots
5 teaspoons honey
2 teaspoons lemon juice
2 tablespoons chopped pecans
  1. Combine all ingredients, except pork chops; mix well. Place chops in a shallow dish; pour marinade over chops. Cover and refrigerate overnight, turning meat occasionally.
  2. Remove pork chops from marinade, discarding any leftover marinade.
  3. Place on grill approximately 6 inches above medium coals. Grill for 10 to 15 minutes, turning once.
