Leftover Easter Dinner
Cakes
- 2 cups mashed potatoes
1 1/2 cups cooked ham, ground up
2 tablespoons fresh parsley
2 teaspoons chopped onion
- 1 egg yolk
Salt and pepper to taste
1/4 cup all-purpose flour
- Vegetable oil or butter for frying (or
combination of both)
- Combine all ingredients, except flour,
in bowl and mix well.
- Shape mixture into cakes and dip into
flour to cover all sides.
- Heat oil in large skillet and fry cakes
until golden brown on both sides.
Serves 6.
