Mustard-Crusted Pork Roast.

Simply elegant: Pork roast wearing a mustard-and-crunchy crumb coating. Serve with hot French bread, buttered broccoli spears and a green salad.

Mustard-Crusted Pork Roast

1 (2-pound) boneless pork roast
Salt and pepper, to taste
2 tablespoons spicy mustard
1 cup garlic croutons
  1. Heat oven to 400°F (205°C).
  2. Season roast with salt and pepper; place in shallow pan and roast for 20 minutes.
  3. Meanwhile, place croutons in plastic bag, roll with rolling pin until crushed.
  4. Remove roast from oven; spread surface with mustard and sprinkle with crouton crumbs. Return to oven and continue to roast for 10 to 15 minutes longer, until meat thermometer reads 150°F to 155°F (approximately 65°C).

Serves 4 with leftovers.
