Spicy Pork Steaks with Apple-Mustard Sauce

Spicy Pork Steaks with Apple-Mustard SauceA spicy pan sauce is part of the flavorful results of this slowly simmered skillet dinner. Serve steaks and pan sauce with mashed potatoes, buttered English peas and hot buttermllk biscuits.

Recipe Ingredients:

4 pork blade steaks, 3/4 to 1-inch thick
1/2 teaspoon ground cinnamon
1/2 teaspoon ground black pepper
1/2 teaspoon ground nutmeg
1/2 teaspoon ground coriander (or use ground cumin)
2 teaspoon vegetable oil
1/2 medium onion, thinly sliced
1/2 cup apple juice or cider
1/3 cup diced dried apples
1 tablespoon apple jelly
2 tablespoons Dijon-style mustard

Cooking Directions:

  1. Stir together spices and rub on steaks.
  2. Heat oil in large nonstick skillet over medium-high heat; add onion and cook and stir until onion is soft but not brown, about 3 minutes.
  3. Push onion to one side of pan; add steaks and brown, about 1 1/2 to 2 minutes on each side.
  4. Add apple juice, dried apples, jelly and mustard, stir to blend well. Bring to a boil, cover, lower heat and simmer for 20 minutes.

Makes 4 servings.
