Avocado with Sesame Soy Dressing
A simple salad of sliced avocado served on a bed of butter lettuce, drizzled with an Asian-style sesame soy dressing.
2 tablespoons soy sauce
1 1/2 tablespoons fresh lemon juice
1 teaspoon Asian sesame oil
1/2 teaspoon granulated sugar
Pinch of salt
2 chilled firm-ripe avocados
12 butter lettuce leaves, rinsed and dried
2 teaspoon sesame seeds, toasted lightly
- In a medium bowl whisk together soy sauce, lemon juice, oil, sugar, and a pinch of salt until sugar is dissolved.
- Halve, pit, and peel avocado and cut crosswise into 1/2-inch slices. Add avocado to dressing and gently turn to coat.
- Line 4 salad plates with lettuce and divide avocado and dressing between them. Sprinkle sesame seeds over avocado.
Makes 4 servings.
